Pot of Gold Cake Pops

Happy St. Patrick’s Day! We could take all the good luck that we could get, so when it comes to St. Patty’s Day, with a kid who believes in the magic of leprechauns and the belief that there is a pot of gold at the end of the rainbow, what do you do? We make our own pot of gold


For biggie’s St. Patty’s Day party we made pot of gold cake pops. If you’re already familiar with cake pops, then this treat is a breeze. I got the idea after a quick google and made my own revisions.


We made a box of yellow cake, threw in green food coloring and baked like usual. After letting the cake cool, I added half a tub of frosting and then formed the balls. After freezing for 2/3 hours, we dipped the balls in black candy melts and melted them upside down on parchment to create the flat top for the pots.
For the gold, instead of yellow nerds, I used crushed up yellow hard candies. I put them in a ziploc bag and gave biggie a meat mallet and let him crush away until we had gold!


As for the rainbow, we used fondant that I cut out and had J color in the spectrum. He especially loved this because he’s been drawing a lot of rainbows lately. Perhaps that’s indicative of something promising?


To affix the gold and rainbows, I used the candy melt as glue and created our pots of gold. Not including the freezing and baking, the production took an hour or so, which made for a fun and colorful afternoon activity!
